simple, delicious lemon cake


Today I thought I'd share my little recipe for a springy, delicious lemon cake. I prefer cake that isn't too moist or dense and that has a good tart lemon flavor as opposed to being too sweet. This recipe meets all of these criteria. 

you will need:
1.25 cups flour
1 tsp baking powder
pinch of salt
1/2 cup softened butter
1/2 cup sugar
2 large eggs
juice of 1 large lemon

4 heaped tbsp icing sugar
1-2 tsp lemon juice
water for thinning

Preheat your oven to 180C. Butter a loaf tin and set aside. Sift your flour, baking powder and salt together. Cream your butter and sugar. Crack the eggs into a small bowl and beat them with a fork. Combine all ingredients together and mix very well. Spoon into your loaf tin.

(just a note on the lemon juice: if your lemon isn't that large I would recommend adding some extra juice to your mixture from a second lemon. you'll need a second lemon for the icing anyways..)

Bake for 25-30 mins or until a fork comes out clean. Your cake should be just starting to brown at the edges.

To make your icing, just combine the icing sugar and lemon juice. I like to use 2 tsp of freshly squeezed lemon juice as I like the icing to be nice and tart. If you prefer to use a little less, just add a few drops of water until your icing is thinned out nicely. 

Transfer your baked cake to a cooling rack or dish. Ice it while it's still warm.

Now all that's left is to make a cup of tea and enjoy a quite moment and a piece of your cake.
