recipe: homemade granola


I've mentioned this multiple times on Instagram, but every week I bake up a huge batch of homemade granola. 

This is mostly what we eat for breakfast everyday, with almond milk, and a bit of seasonal fruit thrown in on top.

Though I have shared the recipe before, I've since perfected it into something even more delicious and so today I thought I would share it again. 

Fall is really the perfect granola baking time. It's cool enough again to have the oven on for a longer period of time, and the delicious smells of baking granola wafting through the house as I knit and putter about in my studio are just dreamy.

So. Here's how I make my granola:

you will need:
about 750g of mixed oats
250g sunflower seeds
250g ground almonds
250g shredded coconut
300g crushed walnuts
300g dried cranberries
3-4 heaped tsp cinnamon
6-8tbsp honey
6-8tbsp nut oil (macadamia, walnut, etc)

Now you basically mix everything (except the dried cranberries) and spread it onto cookie trays. Pour the honey and oil on top and mix around so it's evenly spread. 

Pop the trays into the oven at 200C for about 20mins. You'll need to come back and give your granola a good stir every once in awhile to keep it from burning.

Once it's browned nicely, remove from the oven and let cool in a large bowl. Add the cranberries and mix well. Then put it into jars for easy access throughout the week. To eat just add milk (or soy/almond/coconut milk, or whatever it is you drink...) and (optionally) chopped fresh fruit. If you don't have any fresh fruit on hand you can of course add more dried fruit for variety. 

Repeat again the following week :)
