Christmas Granola Bread


 I'm so excited about this I am practically typing with flour all over my hands. (well...practically or literally. I'll let you guess)

I went into the kitchen originally to bake a loaf of bread from a recipe I had found on Pinterest, and I'm not too sure what happened to be honest. Somehow I found myself in there throwing together flour and oats and honey and peanut butter (what?! peanut butter...for real?) and all sorts of things into a bowl to make dough. And the result? Well the result is what I'm calling Christmas Granola Bread.

And it's delicious. 

So here it is! My first original bread recipe as part of this bread baking project. If you decide to try it, feel free to throw in all sorts of things (well, you know granola-y things like shredded coconut, cinnamon, or your own favorite mixed nuts or dried fruit). 



Makes 1 loaf.

ingredients:
2 1/2 cups whole wheat flour
1 1/4 cup white flour
1 cup rolled oats (not instant)
1/2 tsp salt
1/2 cube fresh yeast
2 tbsp honey
1 tsp peanut butter
2 tbsp olive oil
2 cups room temp water

1/4 to 1/2 cup of the following:
chopped cashews & almonds
dried cranberries & dates
sunflower seeds
chopped candied ginger


In a large bowl mix together flours, oats and salt. Add fresh yeast, honey, PB, and olive oil. Stir together. Slowly pour in the water a bit at a time, stirring as you go. Once you've got a relatively (though not incredibly) sticky dough, stop adding water. 

Knead dough on a floured surface by hand for 5 mins. Add the rest of the ingredients and knead again, making sure all the goodies are evenly distributed. 

Cover with a tea towel and let rise for 45 min- 1 hour, until dough is roughly doubled in size.

Remove dough from bowl and place on a baking-paper-lined baking sheet. Preheat oven to 180 degrees C. Let dough rise while oven heats up. 

Bake for 45 mins, turning heat down to about 170 at the 25 min mark.

Remove from oven and let cool before slicing and serving.

Yum. All that's missing is chocolate. And to be quite honest, you could totally add that too.
